A Recipe for Oven-Baked Monkfish

                                                                                  Serves one
INGREDIENTS

One fillet of monkfish
One tin green peas
One good-sized tomato
One good-sized potato
A dash of Italian-style seasoning
Three tablespoons vegetable oil
One small onion
A little butter
Parsley to garnish

METHOD

1  Take the fish, wash under cold water and then dry in a tea towel

2  Place the fish in a baking tray

3  Lightly pour most of the vegetable oil over the fish

4  Sprinkle some Italian-style seasoning over the fish

5  Take a pinch of white pepper and sprinkle over the fish

6  Chop the onion finely and garnish the fish with it

7  Cover the baking tray with some tinfoil

8  Place in the oven at gas mark 7/150 degrees for half an hour


SERVING SUGGESTION:  Take one good-sized tomato, cut into four parts.  Boil the potato until it is almost cooked through and then remove from pot and place in chip pan with a little vegetable oil and roast until it turns slightly brown.  Melt a little butter in a saucepan and add the peas and simmer them for ten minutes.

Serve the tomato, potato and peas with the cooked fish.

P.S.  A glass of white wine adds an extra twist to the meal!

Contact us and tell us what you think of Archie's recipe.   I think I'll give it a go, though monk fish is a bit expensive.   Is there a cheaper alternative? 

 

I would certainly agree with the 'extra twist' idea but prefer red wine, even with fish and only in moderation, of course.
