Beef Egg-Flower Soup (serves six)

 

Ingredients:

 

160g Minced beef

2 Egg whites (heated

1 tsp Corn flour

3 Cups of Stock or Water

100g Lettuce (finely shredded)

2 tbsps. Carrot (finely diced)

 

Marinade Sauce:

 

1/5 tsp Ginger Powder

1 tsp Spring Onion (finely chopped)

1 tbsp Oyster Sauce

Pinch Salt, Pepper and Dark Soy Sauce to taste

 

Method:

1) Marinate the minced beef for 20 minutes.

2) Bring the stock or water to the boil in a large pot. Add the marinated beef and the carrot and simmer for 3 minutes. Add the lettuce.

3) Mix the corn flour with a little water in a small bowl. Add it to the soup, then add the beaten egg white. Keep stirring and serve. Add the dark soy sauce, salt and pepper and taste.

Would it be better to marinate the beef overnight.
