Beef Egg-Flower Soup (serves six)
Ingredients:
160g Minced beef 2 Egg whites (heated 1 tsp Corn flour 3 Cups of Stock or Water 100g Lettuce (finely shredded) 2 tbsps. Carrot (finely diced)
Marinade Sauce:
1/5 tsp Ginger Powder 1 tsp Spring Onion (finely chopped) 1 tbsp Oyster Sauce Pinch Salt, Pepper and Dark Soy Sauce to taste
Method: 1) Marinate the minced beef for 20 minutes. 2) Bring the stock or water to the boil in a large pot. Add the marinated beef and the carrot and simmer for 3 minutes. Add the lettuce. 3) Mix the corn flour with a little water in a small bowl. Add it to the soup, then add the beaten egg white. Keep stirring and serve. Add the dark soy sauce, salt and pepper and taste. |

Would it be better to marinate the beef overnight.
