Polish Cold Soup (ChTodnik po polsku)
Components: soup greens, 2 carrots, 1 parsley, a stalk of celery, a bunch of young beetroots with leaves, 2 glasses of curds (or cream), 1 clove of garlic, 2 cucumbers, a bunch of radish, 1 tbsp of dill and 1 of chives, 4 hard-boiled eggs, meat cube, 2kg of roast veal and salt.
Directions: Dice young beet leaves and boil in a small quantity of water. When soft add lemon juice or citric acid and continue boiling. Prepare meat and vegetable stock and mix it with young beet leaves. Prepare wheat flour suspension and half a glass of cold stock, blend it and boil again. Add beet acid, cream, sugar, crushed garlic with salt and cool it down. Next add diced cucumber, radish, dill, chives, chopped hard-boiled eggs and cut veal into thin strips. Cool down the soup and then serve. |
Webmaster replies I've just noticed that with many of the recipes from overseas, yours included, there always seems to be cream in the ingredients. Perhaps I'm a bit basic with my food likes.
By the way, why do you eat it cold and not hot?
