Dolma:

 

Vine leaves wrapped and stuffed with mixture of rice and lamb mince.

 

Ingredients:

 

-         Vine leaves

-         Rice

-         Minced Lamb

-         Chopped tomato + tomato puree

-         Salt + chicken stock cubes + citric acid

 

Preparation:

 

  1. Leave the rice in water for ½ an hour.

  2. Then mix after water removal with mince + chopped tomato puree + salt.

  3. On each vine leaf put an amount of one table spoon of the above mixture then wrap in a roll shape.

  4. Arrange the wrapped vine leaves in a deep pot

  5. Dilute the stock cubes in hot water and add tomato puree + citric acid to the solution.

  6. Pour the above mixture on the arranged wrapped vine leaves/ the mixture should cover them.

  7. Leave on slow fine (simmer) for ¾ an hour.

What could you use instead of vine leaves, just in case you can't get them?   And, what do you use to wrap the leaves, or do does the stuffing bind them in??
