Lentil Khichuri
Ingredients:
2 cups Moonq Dal (lentil) 1 cup Rice 5 tbsp Oil 2 inches Green Ginger (finely chopped) 1 cup Mixed Frozen Veg 4 sticks Cinnamon 4 Cloves 4 Cardomons 2 Bay Leaves 2 Green Chillies 2 tbsp Chopped (Green) Coriander Salt to taste 50g Butter
Method: 1 Wash rice and dal (lentil) together and drain water 2 Heat oil in a pot. Add cardomons, bay leaves, cloves, cinnamon sticks for ½ minute. 3 Add chopped ginger, rice and dal and fry for 2 minutes 4 Add 4 cups of water and salt to taste 5 Add frozen vegetables 6 Bring to boil and reduce heat 7 Cook for 20 to 25 minutes until rice and dal is cooked. Add 50g butter and stir 8 Serve in a rice dish and garnish with green chilli and chopped coriander. |
