Soused Herring (from Poland)

 

Ingredients:

 

4 fresh herrings

4tbsp water

3 onions sliced

3 bay leaves

peppercorns

4oz sugar

Sour cream

 

Remove skin from herrings if possible. Cut fish into bite sized pieces Put into a bowl. This is NOT cooked.

Put other ingredients into a pan simmer for five minutes.

When cool pour over the herrings. Cover and put into the fridge for five days.

To serve – drain the coat with sour cream or serve plain. The sour cream can be slightly diluted with the liquid if preferred. Goes will with a salad as a starter.
