This is always a firm favourite. It is often made found for sale at coffee mornings and similar fund raising events. There are many variations of this recipe but condensed milk and beating gives it the crunchy texture.

 

Ingredients:

 

2lbs sugar

1/3 pt milk

3oz butter

Half tin condensed milk

Swiss roll tin lined with oiled tinfoil

 

Melt the butter SLOWLY. Then add the milk and then the sugar. Do everything slowly. Keep stirring.

When it comes to the boil add the condensed milk.

When it comes back to boil, boil continuously. Keep stirring.

Boil about 20 mins.

At this stage the mixture is just beginning to granulate on the sides or the pan. 

Take off the heat. Beat with a hand beater for five minutes. Be careful at this stage as the beating causes the mixture to set. If it starts to get very heavy pour into the tin.

If it bubbles over at the beating stage add a little milk to cool it down. This should not be necessary.
