Roast Duck Chinese Style

 

Ingredients:

¼ cucumber

8 spring onions

salt to taste

a medium duck

 

For the preparation of the duck, wash the duck very well and off excess water. The add salt to the duck all over the skin and set the oven to gas mark 5, then cook the duck in the oven for an hour. And remove the duck from the oven and cut into pieces.

 

Wash the spring onions and cucumber very well and dry off excess of water. Trim the spring onions using a sharp knife, cut them first into sections between 5 or 6cms, them lengthways into thin strips. Arrange these vegetables on a serving plate and place it next to the duck.
