Oregchiette with Chick Peas
Ingredients: 400gr oregchiette (pasta which looks like an ear) 300gr chick peas 300gr fresh tomatoes 1 onion clove of garlic chilli. Bay leaf virgin olive oil parsley, as much as you like.
Preparation: Soak the peas over night. Rinse and strain. Put in a pan with garlic bay leaf and sufficient water to cover. Simmer for forty minutes. Strain
In another pan put a little oil, chopped parsley, and chopped tomatoes. Simmer very gently for 30mins.
In a third pan boil the oregchiette for five mins. Strain. Add chick peas then tomato mixture. Serve. |
